Lollies for Summer with Coconut Milk

Creamsicles for after sports, rehydrating watermelon ice lollies, and orange coconut ice lollies.

Creamsicles for after sports

1 cup coconut milk
1 navel orange or 2 mandarin oranges, peeled and pitted
½ avocado
¼ cup coconut water
1 serving protein powder
2 medjool dates, pitted
1 teaspoon lemon juice
½ teaspoon grated orange rind or ⅛ teaspoon orange extract
½ teaspoon pure vanilla extract

Place all ingredients in a blender and process until smooth.
The mixture will be quite thick, but don’t worry it’s good like that!
Pour the mix into the mold and freeze overnight.

Rehydrating watermelon ice lollies

¼ Watermelon, skin and pips removed and chopped into chunks
250ml Coconut milk or water

Blend the Watermelon until smooth and then add the Cocnut milk or water and blend for another minute
Pour the mix into the mold and freeze overnight

Orange Coconut Ice lollies

Can use any other fruit juice as well other than orange juice

1 cup full fat coconut milk
2 tablespoons pure maple syrup (or honey)
1 teaspoon pure vanilla extract
1 cup orange juice (preferably fresh squeezed, or at least 100% juice, not from concentrate)
1 tablespoon orange or lemon zest (or mixture of the two)

In a small bowl, mix together coconut milk, maple syrup and vanilla extract and set aside.
In a separate bowl, mix together orange juice and orange/lemon zest and set aside.

Two assembly options:
To layer, divide ¼th of the coconut mixture into the popsicle molds and freeze until hard, about 30 minutes. Add orange juice layer and freeze again. Repeat until all of the coconut milk and orange juice is used up.


Alternatively, simply mix the orange juice and coconut milk together, pour into the molds and then freeze until solid, several hours.
