Caramelized Onion & Vegetable Crustless Quiche

Makes 12 muffins.

8 x extra large eggs
250ml fresh cream
Salt & Pepper
Mix all together in one large bowl.

1 x large onion (sliced and caramelized in a little oil)
½ cup grated carrot
½ cup grated marrows
1 handful of thinly sliced spinach
1 cup grated cheese – cheddar or feta

Equally divide all ingredients into the muffin tins with the cheese being the last.

Season and add the egg mixture over the ingredients.

Bake for 20 minutes at 200 degrees

These can be frozen and reheated as needed – great for easy breakfasts. You can change the fillings as you wish to great HUGE variety.
