Bran and Carrot Muffins

187,5ml all bran flakes
110g self raising flour
125ml brown sugar
125ml grated carrots
187,5ml skimmed milk
62,5ml olive oil
1 egg
5ml vanilla extract
2,5ml cinnamon

Preheat oven to 180 C.
Line 12 muffin cups with paper cases.
Mix together all the ingredients, (don’t over mix).
Divide batter between muffin cases.
Bake for 20-30 minutes, or until risen and cooked through
